what the hell am I doing up at this hour, you ask?

I'm cooking.

I just made some roasted eggplant slices & I'm roasting another eggplant for baba ganoush. (I needed to use up the eggplants before they went bad.)

Tomorrow we're going to do some school-supplies shopping for the Munchkin (she's homeschooled, but she still needs paper and colored pencils & such, and it's on sale right now), doing some laundry & putting the cold weather clothes in the storage room (something we should have done months ago), possibly canning some tomatoes, and hopefully making some Curried Tofu with Tomatoes & Spinach (a recipe I've been wanting to test lately).

Oh, and then we have gaming tomorrow night. Busy busy.
