~I found a recipe for Yorkshire Pudding that [livejournal.com profile] iceblink can eat!!

Yorkshire Pudding

  • 1/4 cup beef drippings (both the fat and the juices)
  • 1/3 cup low-carb bake mix*
  • 1/3 cup rice protein powder**
  • 1 tsp salt
  • 4 eggs
  • 2 tsp oil
  • 1 cup half-and-half (in [livejournal.com profile] iceblink's case, use Mocha Mix or Silk Creamer)


  • 1. Preheat the oven to 425F.
    It is essential that the oven be all the way up to temperature before you put in your Yorkshire pudding, or it won't puff up the way it should.

    2. Spray a large cast-iron skiller or a 10" pie pan with nonstick cooking spray, then put the beef drippings in it & tilt the pan to cover the whole bottom. Set aside.

    3. In a bowl, combine the bake mix, protein powder, & salt, stirring them together.

    4. In a seperate bowl. combine the eggs, oil, and half-and-half (or creamer).

    5. When the oven is up to temperature, whisk the liquid ingredients well for at least 1 minute; 2 wouldn't hurt. Add the dry ingredients & whisk just until everything is well combined.

    6. Pour the mixture into the prepared pan, and bake for 20 minutes. Turn the oven down to 350F & give it another 5 minutes or so. Cut into wedges & serve with gravy.

    * Do-It-Yourself Low Carb Bake Mix: 1 cup soy flour, 2 cups soy protein isolate, 2 tbsp baking soda, 1 tsp salt, 2 tbsp Splenda. Sift together & store.

    ** You can find rice protein powder at Whole Foods and other natural foods stores.



    ~I seem to be pretty hungry right now for some reason. Maybe I'm actually thirsty.

    ~Today we got the Munchkin a bunch of school supplies... notebooks, notebook paper, some mechanical pencils with grips, some rolls of Wite-Out tape, some glittery pencils (came with 2 hair clips!), a manuscript tablet, some portfolio folders (1 with a grey kitten, 2 with horses. she picked them out), and a ream of paper for the printer. She wanted to buy some glue, but [livejournal.com profile] nexushoratio had threatened to move if we bought any more glue. (We already have about 5 or so bottles, leftover from last year's back-to-school sales!)

    ~We have even more tomatoes from [livejournal.com profile] punkmom's garden. Fortunately, we also borrowed her canner.

    ~If Mollie Katzen ever comes out with a new cookbook, let me know! I think I have all of the ones that she has written so far, including the children's cookbooks.

    ~I've been using my cellphone during the day too much lately. Either I need to cut down on my peak-time calls, or I need to upgrade my plan. The past few bills have been higher than I had expected.

    ~This is spooky. I haven't figured out the trick to it yet.
