    Yesterday I served panko breaded tilapia fillets with pineapple salsa. One yokel commented, "Hey, these remind me of fish sticks! They'd be even better with some ketchup!"

    I just about fell down and cried. Really.

    I need to make food that I can't eat. I need someone to tell me if the recipe modifications work.

  • I need to find a new jambalaya recipe for work. I should stress that this needs to be an EASY recipe. Last year, I came up with the perfect one, but I can't use it anymore since we no longer sell one of the ingredients. I have some ideas on how I can change it, but I might need guinea pigs to taste test the new recipe!

  • I'm also debating on changing the King Cake recipe I used last year. It was good, but the sugar glaze was awfully hard & candy-like. I liked last year's recipe because it was pretty simple (another requirement this year... last year I had to make 2, this year I'll have to do 4! 2 for work, 2 for RevolutioN), so I'll have to play around with it a little. Once again, I might need guinea pigs.

    Apparently our big crockpot isn't quite big enough for a double batch of apple butter.

    At least now the house smells all cinnamony.

    ETA: Moved the batch to the big 18-qt. electric roaster instead. All is well.

    Just a few things from Trader Joe's. Tomorrow is going to be a busy, busy day, so I needed stuff to pack in lunchboxes, stuff for a fast & easy dinner (pizza!), plus I got some juice & strudel for the Munchkin & the sister for breakfast:

    What can you tell me about agave nectar? I've heard it's good for diabetics and hypoglycemics because it has a low glycemic index & is absorbed slowly into the body.

    25 lbs. of dried black soybeans just arrived at our home.

    It's going to be a cold night, I can tell.
    I've got my thumbhole sweatshirt on & am making myself a big mug of tomato boullion.

    Today we went to 99 Ranch Market. Got some instant pho broth for my brother, since he just can't get decent Vietnamese food in Utah. We also got him some dried lemongrass, some dried galangal, some rice stick noodles, and a big bowl (pho bowls are huge) & spoon so he can enjoy a real pho experience. We also got a few things for ourselves: dried shiitake mushrooms, 5 spice powder, star anise, rice vinegar, shiitake mushroom flavored soy sauce, curry beef jerky, Sriracha chili sauce, a daikon radish, some big packs of tofu, a tiny plastic rice bowl for the Munchkin (a bribe to get her to behave in the store), and some Hello Kitty good luck money envelopes.

    99 Ranch was extremely busy today. I think we went too late in the day & too close to the Lunar New Year to have a relaxing shopping experience.

    Flax seed, whirred in a blender.
    Put in a bowl, pour boiling water over it.
    Add vanilla paste, cinnamon, nutmeg, sweetener.

    Eat as a hot cereal. Add cream, if you like.

    Last night we did our annual batch of latkes. Latkes are one of our family holiday traditions (it's actually a tradition that we started celebrating with [livejournal.com profile] ag_unicorn, [livejournal.com profile] thats_ms_dragon, [livejournal.com profile] dancing_star, and their children), but since we made some dietary changes this year, I figured I'd probably never be able to have latkes again. However in the spirit of not feeling deprived but not overdoing it, we made latkes & invited [livejournal.com profile] iceblink and [livejournal.com profile] insomnia over to help us eat them.

    In addition to the standard potato latkes, we tried a new recipe: matzo meal & cottage cheese latkes. Apparently this recipe was developed by Russian emigrés. They reminded me a bit of hush puppies; maybe needed a bit more onion. I'd like to think that they were probably kinder to my blood sugar than the potato ones, but I haven't actually done the counts on the ingredients, so I could be in for a shock. It's only once a year, though, and I didn't go crazy. Besides, like [livejournal.com profile] ag_unicorn said last year, "I just don't think it would be the holidays without latkes. :)"
